    Due to our continued development we are now seeking to recruit Sous Chefs to further develop the food operations at two of our properties in Cumbria.

    We currently operate two distinctive properties in the North of England, and with the acquisition of a third property imminent, this is a very exciting time to be joining the group.

    We are currently purchasing our third property, a very distinctive property in a lovely village close to the Yorkshire Dales and within Cumbria, just 5 miles from the M6 motorway. The property has 15 bedrooms, a Restaurant seating approximately 45 and further seating in the Bars and in the lovely garden to the rear. We are striving to offer fresh local produce and aspiring to rosette or Bib Gourmand levels for our food.

    The Inn is a 17 bedroom, 4 star Inn overlooking LakeUllswater in Cumbria. We specialise in fresh food from local ingredients served within our 60 cover Restaurant, 40 cover bar and external seating for approximately 50. We are aspiring to Michelin Bib Gourmand levels for our food.

    Reporting directly to the Head Chef the Sous Chef will be able to support the Head Chef in maintaining profit levels, production of food to the laid down and agreed standards and maintaining the levels of food hygiene and working with HACCP controls.

    Menu development is an essential part of our business planning and the Sous Chef has a responsibility to assist the Head Chef in the production of fresh seasonal menus and to maintain the levels of consistency of food quality.

    Of course, the most important part of the role is your knowledge of food and food preparation. We are looking for someone who is passionate about food and can deliver this onto the plate. Well versed in all areas of the kitchen, you will have a proven track record as a Sous Chef in a similar sized kitchen or a Senior Chef De Partie looking for their first position as a Sous Chef. You will have demonstrated experience of working with fresh ingredients and of working closely with suppliers to maintain quality. Finally you will be able to manage GPs and to inspire your team to also deliver these GPs.

    Being a seasonal business you will be able to manage the kitchen through the quieter times but thrive and excel in the summer months with enthusiasm and drive to ensure your team are hungry to constantly improve on their achievements to date.

    The Brackenrigg Inn provides a fantastic opportunity to join this forward thinking and developing company in a well established operation. Our new property offers a different challenge but with the same opportunity. We will be developing this kitchen from scratch with new equipment and a completely new brigade.
